1/3 Cup Organic Wheat Flour
1/2 Cup Organic Coconut Flower (I used Bob's Red Mill brand)
3 drops of doTERRA Lemon Oil
4 Chicken Brest
3 tablespoons of Organic Coconut oil
3 tablespoons of Canola oil
Combine ingredients 1-4 in a large glass dish. Remember to mix very well to get the lemon oil mixed in good. Set aside. Put the Coconut oil and the Canola oil in a large skillet heat up until it gets hot to fry chicken. As the oil is heating up to fry the chicken Cut chicken into about 1" strips. Put strips into the mix that you set aside and coat the chicken lightly. When oil is hot and ready remove your chicken strips from the mix and carefully add them in the hot oil. It is best of you add starting from the back and working your way to the front. In doing so it will help you not burn or splash on yourself. Oil will act funny and boil differently (I thought so) this is okay, just make sure that it does not boil over. When chicken is cooked all the way through and golden brown remove from oil and place on a plate that has a paper towel or brown bag on it. The brown bag and paper towel is to just help remove any extra oil. Now time to eat! Remember the chicken is HOT!
In this photo you will notice that I have some potato wedges. I used Alexia: Oven Reads (that is the brand). I found these in the natural section at my local food market. They are all natural and are made with pure olive oil. The ones that are in the photo is the Olive Oil, Parmesan & Roasted Garlic. They can be replaced with your favorite french fry or maybe even homemade tater tots!
